Abstract

This paper had the objective of proposing and applying a procedure to standardize sanitary inspections in grocery stores in Ibiúna/ SP and to critically analyze the results obtained so as to meet the objectives of food sanitary surveillance. The study was conducted during five months in four grocery stores. In the first inspection, the situation was diagnosed and sanitary irregularities were identified. After this phase, the sanitary surveillance team visited the grocery stores again on the dates scheduled, aimed at checking the progress of sanitary improvements and difficulties encountered. Results showed that after four inspections in each grocery store, businessmen or managers managed to meet most of the sanitary improvements requested by the surveillance team, and the main difficulties they found were related to understanding information and time and costs for execution.
